Double Chocolate Fudge Cookies

Chocolate lovers, this one’s for you. The combination of cocoa powder and chocolate chips creates a smooth, fudgy flavor that won’t disappoint. Serve with a glass of cold milk!
INGREDIENTS:
- ½ cup organic unsalted butter, softened
- 2/3 cup Big Country Organic Cane Sugar
- ½ cup Big Country Organic Light Brown Sugar
- 1 large egg, at room temperature
- 1 teaspoon organic vanilla extract
- 1 cup (130g) organic all-purpose flour
- 2/3 cup Big Country Organic Cocoa Powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 Tablespoons organic milk
- 1 cup semi-sweet chocolate chips or chocolate chunks
- 1/3 cup Big Country Organic Powdered Sugar
INSTRUCTIONS:
- Beat butter and sugars, until light and fluffy (about two minutes).
- Beat in egg and vanilla.
- In a separate bowl, combine flour, cocoa powder, baking soda and salt.
- With the mixer on low speed, add flour mixture to butter mixture. While mixing, add in milk and mix until just barely combined. Fold in chocolate chips.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 2 hours and up to 2 days
- Once ready to bake, pre-heat oven to 350 degrees. Line a large baking sheet with parchment paper. Scoop 2 ½ tablespoons of dough (about 2.5 oz) and roll into balls. Place cookies on a baking sheet (lined with parchment paper), spaced at least 2 inches apart.
- Bake for 9-11 minutes and cool on wire rack. Dust with powdered sugar to finish (I recommend using a sifter).
