Chunky Brown Sugar Granola

This granola recipe uses our rich and flavorful organic dark brown sugar, and it makes ALL the difference. Top on your favorite yogurt or eat plain as a snack.

INGREDIENTS:

  • 1 cup organic old fashioned oats
  • 2 cups organic quick oats, separated
  • 1 ¼ cups chopped nuts & seeds (I recommend pecans, cashews, macadamia nuts, walnuts)
  • 1/3 cup seeds (I recommend pepitas, sunflower seeds, pumpkin seeds)
  • ½ cup Big Country Organic Dark Brown Sugar
  • ¼ cup organic maple syrup*
  • ¼ cup organic honey*
  • 6 tablespoons organic unsalted butter
  • 2 teaspoons vanilla
  • ¼ teaspoon salt

INSTRUCTIONS:

  • Preheat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper. Set aside.
  • Take one cup of quick oats and pulse in food processor or blender until it’s finely ground. If you don’t have a food processor, you can skip this step and just use the oats as is.
  • In a large bowl, combine ground quick oats, regular quick oats, old fashioned oats, nuts and seeds, until well combined.
  • In a medium saucepan, start melting butter over medium, while stirring often. Once butter is almost melted, add in maple syrup, honey and brown sugar. Stir to combine while still on medium heat. Once the mixture just starts bubbling, remove from heat.

  • Pour liquid mixture into oat mixture. Using a wooden spoon, stir until fully combined and all oats are covered in sugar mixture.
  • Spread mixture onto prepared baking sheet. Flatten into one even layer and firmly pack to mixture into the baking sheet.
  • Bake for 12 minutes. Remove from oven and using a spatula, flip over the mixture in large pieces (don’t break up the granola too much!).
  • Continue baking for another 12 minutes or so. The mixture that’s on the edges of the pan will be hard/crispy and the middle pieces will be starting to crisp up but still a little soft.
  • Remove from oven and let granola fully cool before breaking into large chunks. Store at room temp in a sealed container.

* Alternative option: You can omit the maple syrup and use ½ cup total of honey
