Chocolate Chip Banana Bread

Chocolate chip banana bread…is there anything better? Sometimes I purposefully let my bananas get extra ripe just so I can bake this!

INGREDIENTS

  • ½ cup organic unsalted butter, melted and slightly cooled
  • ½ cup Big Country Organic Cane Sugar
  • ½ cup Big Country Organic Light Brown Sugar
  • 2 organic free-range eggs
  • 1 teaspoon vanilla
  • 2 cups mashed, ripe, organic bananas (about 4 bananas)
  • 1/4 cup organic plain greek yogurt*
  • 1 3/4 cup organic all purpose flour (230 grams)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup organic chocolate chips, divided

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Prepare loaf pan lined with parchment paper. If you don’t have parchment, make sure you generously grease the pan! Nothing is more sad than half of your loaf being stuck to the bottom of the pan.
  2. In large bowl, cream together butter, oil and sugar. Cream for 3 minutes.
  3. Add eggs, vanilla, bananas and greek yogurt. Stir well until combined.
  4. Stir in flour, baking soda, and salt. Simply fold in ingredients until combined, don’t over-mix.
  5. Gently fold in ¾ cup chocolate chips.
  6. Pour into lined loaf pan.
  7. Sprinkle with remaining 1/4 cup chocolate chips. Also, sprinkle with 1 Tablespoon of Big Country Organic Cane Sugar on top of bread.
  8. Bake in 350 degree oven. Cover with foil halfway through cooking, approximately 25 minutes to prevent burning. Bake for 45-55 minutes or until toothpick comes out clean. To ensure it’s done, use a food thermometer to test it! If inserted in the middle of the loaf, it should be 200 degrees when ready.
  9. Let cool for 15 minutes before slicing.

TIPS

  • If you are in a pinch, you can use sour cream if you don’t have Greek Yogurt! You can also use vanilla flavored Greek yogurt, if plain isn’t available
  • Be sure you don’t skimp on bananas! If your bananas aren’t ripe enough, pop them in a 300 degree oven (the whole banana, with the peel) on a lined cookie sheet. Bake for about 10-15 minutes, flipping once, until bananas are almost black. Looks scary, but it’s supposed turn black when ripened this way!!
